We are Bailor & Cailan Ellison and we own and operate Evie & Me Cookies in Kyle, TX, but our journey started back in 2014 when we met as servers in Austin. Not long after, we moved to Los Angeles to follow Bailor’s passion for film. We spent seven incredible years there, but when COVID hit, it forced us to make some big decisions. We decided to move to Florida to be closer to Cailan’s family, and while we tried out different jobs, we knew deep down we wanted to create something meaningful. Everything changed when our daughter, Evie, was born in December 2021. That’s when we realized we wanted to build a business that would allow us to spend more time together as a family.

With Cailan’s love for baking and Bailor’s background in media, we decided to start our cookie company, focusing on making handcrafted, Texas-sized cookies. Cailan spent months perfecting recipes, and after countless batches and taste tests, we found our signature Sea Salt Chocolate Chip cookie. While she baked, Bailor worked on bringing our vision to life with branding, packaging, and logistics. In August 2022, we felt the pull to return to Texas, where we belonged. We reconnected with the community we love, and since then, we’ve sold at markets across the area, meeting incredible people who appreciate the care we put into every cookie.

By January 2023, we’d moved into a commercial facility and started participating in events all around south-central Texas. Then, in September 2023, our hearts grew even fuller with the arrival of our second daughter, Daisie. Evie and Daisie inspire us every day, and they’re at the heart of why we do what we do. We’re excited for what’s ahead—growing our business, opening our own brick-and-mortar shop, and continuing this incredible journey together as a family. Through all the highs and lows, we’ve grown stronger and are more motivated than ever to share our cookies and our story with even more people.
